Summer sorbet: Boozy Blueberry Thyme

What you will need:

  • 4 cups blueberries
  • 1 tablespoon fresh lemon or lime juice
  • 1 cup extra fine granulated sugar
  • 1 cup water
  • 4 springs fresh thyme
  • 1/4 cup vodka

What to do:

  1. Place blueberries into a blender and purée. Add lemon juice and transfer to refrigerator to chill
  2. Add sugar and water to a heavy bottom pan and bring to a boil. Whisk until sugar is incorporated
  3. Continue cooking until mixture coats the back of a wooden spoon. Add thyme and allow to come to room temperature and then transfer to refrigerator to chill
  4. Once chilled, mix simple syrup (approximately 3/4 cup) with puréed blueberries and vodka. Pour mixture through a sieve and into your ice cream maker. Churn according to manufacturer’s directions
  5. If not serving immediately, transfer to freezer appropriate container until ready to serve
  6. Garnish with additional thyme if desired
